Nestled in the lush hills of Risaralda in Colombia’s coffee-growing heartland, Finca Milan represents a harmony of agricultural tradition, thoughtful innovation, and deep respect for nature. Grown at elevations between 1,400 and 1,800 masl, these coffees develop refined aromatic complexity and layered sweetness.

The farm focuses on sustainability, responsible farming practices, biodiversity protection, and continuous quality improvement. It also serves as a collaborative hub where coffee professionals from around the world explore new techniques and flavor expressions.

⚗️ Culturing Fermentation Technique (G122)

For this lot, Finca Milan applies a high-intervention culturing process, similar to how yogurt is made. Starter cultures enriched with beneficial microorganisms and local fruits (such as pineapple and mango) are combined with freshly harvested coffee cherries to guide fermentation.

In this specific G122 process, cherries are fermented with coconut and culture in sealed tanks for approximately 144 hours, with key metrics like pH, temperature, and sugar levels carefully monitored. After fermentation, the coffee is gently washed and dried over about 30 days using a mix of sun and mechanical methods to preserve clarity and structure.
