Colombia Pink Bourbon Honey is cultivated on the hillsides of the Andes at Immaculada Coffee Farms, a biodiversity-focused estate surrounded by native forests and rare varieties such as Sudan Rume, Laurina, Geisha, and Eugenioides. Elevation and careful agroforestry practices yield clarity, sweetness, and floral nuance.
Only the ripest cherries are handpicked. The lot undergoes a 96-hour anaerobic fermentation in sealed tanks at 18–20 °C with a water-displacement valve regulating pressure. After pulping, beans are dried on raised beds for 12 days under controlled conditions, then rested to stabilize the profile.
Each cup layers rose florals and stone-fruit sweetness over caramel undertones—an elegant expression of Colombian terroir, crafted for filter brews and cold brew alike.
