From the majestic slopes of Jabal Nabi Shu’ayb, the highest mountain in the Arabian Peninsula, this lot honors Yemen’s deep coffee legacy. The rare Odaini variety is grown on ancient terraced farms, carefully nurtured and handpicked at peak ripeness to preserve purity and quality.
Cherries undergo a controlled anaerobic fermentation in sealed tanks without oxygen, enhancing complexity and fruit intensity. After fermentation, beans are slow-dried up to 21 days on raised African beds under the Yemeni sun, allowing sugars and acids to develop and stabilize.
